Colorful Zebra Cake (Eggless)

Ingredients:

[For Cake]

All Purpose Flour                   2.5 cups
Butter (softened)                  75 gms
Caster/Powdered Sugar      2 cups
Baking Powder                       2¼ tsp
Baking Soda                            ¼ tsp
Salt                                            ½ tsp
Milk                                            1 cup
Vegetable Oil                         ¾ cup
Vanilla Essence                      1 tsp
Colors                                      As per choice

[For Jam Syrup and Coating]

1. Berry Blast Jam (or any jam of your liking)
2. Water

Procedure:

1. Sift flour, baking powder and baking soda and keep aside.
2. Grease a tin with butter and dust it with the flour and keep aside.
3. Take butter in a bowl and add sugar to it and beat it till it’s fluffy and somewhat light in color. If it’s somewhat stiff add vanilla essence to it and then beat it. If you still feel a little stiffness just add a teaspoon of milk to it and then beat it. Keep doing it until you get the desired fluffiness.
4. Add the dry flour mix (in four batches) adding milk along with to mix it. Add oil at this stage too with each batch.
5. Mix gently till the batter is homogeneous and have a pouring consistency. Divide the batter in three batches.
6. Add different colors to them (I mixed Blue, Red and Yellow) and mix thoroughly until the color mixes evenly throughout the mix.
7. Now take the greased pan and pour the batters one scoop at a time alternately in the middle of the pan. As another scoop is poured the bottom color layer will get pushed towards the side of the pan.
8. Bake it for about 35-40 minutes at 180°C (350°F). Then check with a toothpick, if it comes out clean then it’s done. Take it out and let it cool.
9. For making jam syrup, heat ½ cup water in a pan and add 2-3 tbsp of jam into it and stir it till it’s dissolved and have the desired consistency. Keep it aside to cool down.
10. Cut the cake horizontally into two pieces and apply the syrup on both sides evenly.
11. Now put the two layers back together and drizzle some syrup on the top as well. You can make some holes with the help of a toothpick to make the cake soak the syrup well.
12. Now coat the cake in a layer of jam, and decorate it as you wish to. Enjoy with friends and family.

(P.S. - I used Kit-Kat and Gems/M&Ms as they are my favorite)
