Dhuska Jharkhandi recipe

Dhooska or Dhuska or Dushka is a popular deep fried snack eaten all over Jharkhand. The main ingredients of the dhooska are powdered rice, chana dal (powdered) and sometimes boiled potatoes are also added to this savoury dish. The bread is then deep fried. It is often served with any sauce or chutney. Dhuska is mostly made in the market area stalls where people enjoy it as a snack and is rarely found in larger restaurants.

Ingredients: 

Rice                                   2 cups
Chana Dal                       1 cup
Urad Dal                           1/2 cup
Ajwain                               1 tsp
Jeera                                 1 tsp
Haldi Powder                   1 tsp
Heeng(asafoetida)       1 pinch
Oil                                      For frying

Procedure:

1. Soak rice, chana daal and urad daal for 6-7 hours.

2. Grind it into a fine batter using water occasionally. Neither too thick nor too runny. Keep a good pouring consistency.

3. Keep the batter aside for 2-3 hours.

4. Add salt, ajwain, jeera, haldi, heeng to the batter and mix it well.

5. Deep fry in the shape of puris.
