Sheer Khurma
Sheer khurma or sheer khorma (Shîr xormâ meaning "milk and dates") is a festival vermicelli pudding prepared by Muslims on Eid ul-Fitr and Eid al-Adha in Afghanistan, Pakistan, India and parts of Central Asia.
It is made from different dry fruits, vermicelli, condensed(thickened) milk, sugar etc.
Depending on the region, cardamom, pistachios, almonds, cloves, saffron, raisins, and rose water are also added.
Ingredients :
Sewaiyan ------ 200 gms
Sugar ------ 4 tbsp
Khoya ------ 100 gms
Milk ------- 1 litre
Chironji ------- 20 gms
Dates ------- 8-10
Raisins ------ 20 gms
Cashew ------ 20 gms
Almonds ------ 20 gms
Ghee ------ 4 tbsp
Elaichi Powder ------ 1 tsp
Condensed Milk ---- 200 gms
Rose essence ------ optional
Procedure :
1. Chop cashew and almonds and grind it to a paste using milk. Keep it aside.
2. Chop Cashews, almonds, chironji and roast in 2 tbsp of ghee. Keep aside.
3. Roast Sewaiyan in ghee too until its golden brown.
4. Put milk in a pan and bring it to boil, add sugar, sewaiyan, dry fruit paste and roasted dry fruits and cardamom powder.
5. Add condensed milk and cook till you get the desired consistency.
6. Serve and garnish with chopped dry fruits.
