Paddu Pancakes | Paniyarakkal Pancakes
The pan which is used to make it is called a paniyarakkal (pic), which is easily available in any of the supermarket. This fast and easy pancake recipe is handy when you are hungry for a quick sweet snack and these cute little ‘dim sums’ are also easy to make.
These paddu pancakes have a ‘special ingredient’ which really gives it a different hit.
Let’s make this sweet delightful snack.
Ingredients:
2 cup All-purpose flour/Maida2 Tbsp Granulated sugar
2.5 tsp Baking Powder
2 cup Milk
3 Tbsp (+for greasing) Oil
1 tsp Vanilla Essence
½ tsp Salt
1 cup Appy Fizz
Procedure:
1. Mix flour, sugar, salt, baking powder, milk,, oil, vanilla essence and mix till it takes a smooth batter. Use water as required to thin it down.2. Now mix Appy fizz and mix it gently so the bubbles won’t escape.
3. Put Paniyarakkal on flame and pour few drops of oil into each slot (2-3 drops will be sufficient).
4. Pour the batter into each slot slightly less than full.
5. When bubbles start to appear on the top then flip it* with the help of the wooden pick which is provided with it.
(*now this part is slightly tricky and in the beginning you’ll find it so hard to flip it perfectly, but trust me with some practice you’ll become good in making perfectly round paddu pancakes.)
