Eggless Banana Muffins

Banana Muffins Eggless, muffins, Cupcakes, Banana Cupcakes

Ingredients:

  • 3 Very Ripe Bananas, mashed
  • ½ cup melted butter
  • ½ cup milk/buttermilk
  • 2 teaspoon vanilla essence
  • 1 cup granulated sugar (brown sugar optional)
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1 pinch salt
  • 1 ½ cup all purpose flour (maida)

Procedure:

  • Preheat oven to 180° C (350° F). Line 12-cup muffin tray with cupcake liner.
  • Mix mashed banana and melted butter until combined with the help of an electric mixer on medium speed.
  • Add in milk/buttermilk, vanilla essence and mix thoroughly.
  •  Add in sugar, baking soda, baking powder, salt and mix.
  •  Add flour and mix until just combined using a whisk. (Do not use electric mixer for this step).
  • Fill cupcake liners 3/4th full.
  • Bake banana muffins for 20-25 minutes or until a wooden pick comes out clean.
  • Cool it and enjoy.

You need this much ripe bananas.

I used silicon molds here, so its easy to de-mold.
But you can use cupcake liner with muffin tray too.

Fill the molds 3/4th full, so that it has space to rise and do not overflow.
