Eggless Banana Muffins
Serves – 12 Calories – 264 kCal
Ingredients:
- 3 Very Ripe Bananas, mashed
- ½ cup melted butter
- ½ cup milk/buttermilk
- 2 teaspoon vanilla essence
- 1 cup granulated sugar (brown sugar optional)
- 1 teaspoon baking soda
- 2 teaspoon baking powder
- 1 pinch salt
- 1 ½ cup all purpose flour (maida)
Procedure:
- Preheat oven to 180° C (350° F). Line 12-cup muffin tray with cupcake liner.
- Mix mashed banana and melted butter until combined with the help of an electric mixer on medium speed.
- Add in milk/buttermilk, vanilla essence and mix thoroughly.
- Add in sugar, baking soda, baking powder, salt and mix.
- Add flour and mix until just combined using a whisk. (Do not use electric mixer for this step).
- Fill cupcake liners 3/4th full.
- Bake banana muffins for 20-25 minutes or until a wooden pick comes out clean.
- Cool it and enjoy.
You need this much ripe bananas. The ones with large black patches |
I used silicon molds here, so its easy to de-mold. But you can use cupcake liner with muffin tray too. |
Fill the molds 3/4th full, so that it has space to rise and do not overflow. |
