Egg Curry | An Easy-Peasy Recipe

Egg curry in my opinion is the very first 'non-veg' recipe we all learn to cook, and it has to be an easy-peasy no hassle kind of recipe. Hence, this recipe which will help you learn the way I learnt it.
Hope this help you start your journey into the magical world of cooking. Personally speaking my earliest recipe which initiated my cooking journey is 'Daal Tadka' which was shown to me in the most easy way possible and I was like seriously is it really this easy to cook. And then, I tried it at home, it was okay okay but it opened me up to a whole new world of cuisines, spices and techniques. That's how my cooking journey began.

Ingredients:

Boiled Eggs                   - 7 to 8 pcs
Turmeric Powder          - 1 Tbsp
Red Chilli Powder         - 1 Tbsp
Dhaniya Powder           - 1 Tbsp
Jeera Powder                - 1 Tbsp
Garam Masala               - 1 Tbsp
Tej Patta                         - 2 pcs
Jeera                               - 1 tsp
Dalchini                           - 2 pcs
Badi Elaichi                    - 1 pc
Laung                              - 5 to 6 pcs
Ginger Garlic Paste       - 1 Tbsp
Onion (Chopped)           - 2 medium sized pcs
Potato (Wedges)            - 1 pc
Onion Paste                    - 1/2 cup
Mustard Oil                     - 1/2 cup
Salt                                   - To taste


Procedure :

1. Heat oil in a pan and shallow fry the eggs till a golden crust is formed (Poke some holes in eggs to avoid them from bursting and popping in oil).
2. Shallow fry the potato wedges until half cooked.
3. Now in the same oil add jeera, dalchini, badi elaichi, laung and tej patta and wait till crackling stops.
3. Add chopped onion and stir till golden brown.
4. Add ginger-garlic paste and mix well so it doesn't stick to the pan.
5. Onion paste is added next. After its cooked add the potato wedges.
6. Now add turmeric powder, red-chilli powder, dhaniya powder, jeera powder and garam masala. Add salt accordingly.
7. Mix and stir well until oil is separated from it. Add water in small quantity in between to keep it from burning. 
8. Add water to make the gravy and keep it on high flame to cook the gravy properly. Now it's totally upto you that how much thick gravy you want to keep. Evaporate water accordingly till the desired consistency is achieved.
9. Add the fried eggs to the gravy one by one and bring it to a boil.
10. Serve hot and enjoy.
